The first time I crossed the border there was a Turkish Cypriot cyclist waiting for me and my friend to take us on a nice ride to the base of the mountain range in the North. Good ride, great people, all in all a nice outing that will be repeated.
Halloumi cheese is the quintessential ubiquitous Cypriot food. It’s firm and usually packed with mint. Although I’m told high quality fresh halloumi can be eaten “raw”, it’s almost always cooked first, either grilled or pan-fried with a touch of olive oil. It is a bit reminiscent of Central American fried cheese, but the consistency is much firmer and is much more salty. We do have many halloumi days and nights here. With pita in a sandwich, still warm mixed in salads, in omelets, even on pizza , we are definitely not lactose intolerant.
