I’m fortunate enough to have a cyclist friend who has lived on the island for 14 years and obviously knows a number of great spots for riding. On a blistering Saturday we did a long ride around the base of the Troodos mountain range.

Halloumi???
Halloumi cheese is the quintessential ubiquitous Cypriot food. It’s firm and usually packed with mint. Although I’m told high quality fresh halloumi can be eaten “raw”, it’s almost always cooked first, either grilled or pan-fried with a touch of olive oil. It is a bit reminiscent of Central American fried cheese, but the consistency is much firmer and is much more salty. We do have many halloumi days and nights here. With pita in a sandwich, still warm mixed in salads, in omelets, even on pizza , we are definitely not lactose intolerant.
